- Winemaking Notes
Grapes are hand harvested and destemmed before fermentation onset. Pump overs are utilized for colour extraction. Before alcoholic fermentation is complete, it is pressed to make sure that the tannin expression is fine and subtle. A portion of the wine is matured in new French oak for 6 months to create a complex wine with supple tannins.
- Growing Conditions
South Africa's 2022 grape harvest will be remembered as a cool season with moderate weather conditions which led to slower-than-usual ripening in most of South Africa’s wine-producing regions. In some cases, delaying harvest with up to a week. White cultivars did extremely well, red wines tended to have red/more fruit driven profiles because of the cooler harvest.
- Food Pairing
A lighter offset to rich robust meat dishes, such as espetada, barbequed meat and pastas.
