Despite its recent surge in popularity, Method Ancestral wines are far from a new fad. This sparkler dates back pre-Champagne, where the wine is bottled prior to fully completing its first fermentation, allowing carbon dioxide to be produced in the enclosed bottle by the natural sugars found in the grapes.
Chenin blanc has long been a very important part of the Bosman wine proposition, being some 20% of our plantings and production. In 2000 the family acquired a vineyard in the Upper Hemel-en-Aarde Valley which would supplement their offering with cool climate grapes. It was just fitting that Chenin would find a new expression for the wine team here on this beautiful farm.

It is categorised as a Dry Sparkling wine thus a touch of sugar will be noticeable on the palate, but give it an hour to open up, and that characteristic Chenin chalkiness and acid will appear, rounded out with beautiful lemon curd and pear notes.
- Winemaking Notes
We pick and the transport in small crates to our Wellington cellar then destem, press, ferment at cool temperatures, bottle, riddle, disgorge and that’s it. No additions of any kind.
- Growing Conditions
Grapes sourced from a Chenin Blanc vineyard planted in 2009 on the De Bos Dam ridge. This vineyard showed beautiful potential from the start, and to the end of the growing season the harvest was reduced to one bunch per good quality shoot to produce a quality batch with great analysis and fruit expression.
- Food Pairing
A fantastic wine to pair with a whole range of dishes: an antipasti platter, mains of carbonara pasta, grilled fish or chicken, and a range of salads. But actually it is the ideal aperitif and conversation starter.
