- Winemaking Notes
Harvested on the 28th of February-the cooled grapes were sorted, destemmed and slightly crushed. Fermentation lasted for 2 weeks in a single open top fermenter. Fermentation temperatures were cool and only pump overs were utilized to ensure a softer tannin extraction. Pressed to three 300L 2nd and 3rd fill French oak barrels. Barrel maturation lasted 12 months. A 12-month bottle maturation regime in our cellar environment ensures optimum release timing two years after harvest.

A great partner to venison and duck, but also grilled red meat dishes. Lentil moussaka as vegetarian pairing would work well with the soft fruit expression of the Pinotage.
